Well, it’s another round of biscotti baking this morning. Today I tried a couple different variations on my original recipe.

More Biscotti
In the front is Black and White biscotti. Behind left is Walnut biscotti and on the right is Chocolate Chip. For the Black and White, I divided the dough in half. I formed the one half on the baking sheet into two loaves. I then added 1/2 teaspoon of espresso powder, 2 tablespoons of cocoa, and 1/2 cup of chocolate chips to the remaining dough. After mixing, I spread this chocolate dough on top of the two loaves. It turned out pretty, but I think it’s probably more trouble than it’s worth. The other two variations came from substituting the walnuts and the chocolate chips for the almonds.
As I mentioned in the last biscotti post, that recipe is really flexible and always turns out.

My mom loves to make biscotti and we always get some at Christmas time. You are inspiring me to make some myself! There are 364 other days in a year to have biscotti, right?
If you havent already, try Chocolate and dried Cherry.
